Ice Box Cheese Wafers
A classic make-ahead cheese wafer recipe from Mrs. Harry Harrington. These savory crackers combine sharp cheddar, butter, and pecans with a hint of cayenne pepper for a perfect appetizer or snack.

Ingredients
- 1/2 lb. cheese, grated
- 1/4 tsp. cayenne pepper
- 1/2 c. pecans, chopped
- 1/4 lb. butter
- 1/2 tsp. salt
- 1-1/2 c. flour, sifted
Instructions

Cream cheese, butter, salt and cayenne.

Add flour and knead into two long rolls about 1-1/2 inches thick.

Wrap in foil and place in refrigerator overnight.

When needed, slice thin wafers and bake at 350° about 10 minutes or until light golden brown.

- • These wafers can be made ahead and stored in the refrigerator as dough logs, then sliced and baked fresh as needed
