Apricot Salad

Ingredients
- 1 pkg dried apricots
- 2 pkgs lemon jello
- 1 env gelatin
- 1/4 c cold water
- 1 c boiling water
- 1 c apricot juice
- 1 No. 2 can crushed pineapple
- 1 pkg tiny marshmallows
- 1 8 oz. pkg cream cheese
- 1 can or pkg flaked coconut
- 1/2 c chopped pecans
- 2 tbsp salad dressing
- 1 No. 2 can apricot halves, drained

Cook dried apricots until very soft and almost dry. Mash and beat until smooth.

Soften gelatin in cold water. Dissolve jello and softened gelatin in boiling water.

Drain apricots and add 1 c. of the juice to the jello. Set aside 1 c. of this jello and into the remainder blend apricots, drained, crushed pineapple and marshmallows.

Combine cream cheese, salad dressing, 1 c. jello mixture, coconut and pecans.

Place generous tbsp. of apricot, pineapple mixture in bottom of individual molds. When "set" cover with spoonful of cheese mixture.

Allow this to congeal then complete filling molds with apricot pineapple jell. Chill.

To serve, unmold on salad greens and garnish with 1/4 of an apricot.
