Cauliflower Flowerette
A guide for preparing fresh cauliflower flowerettes for dipping, with tips for keeping cauliflower white and suggestions for other vegetables to serve alongside.

Ingredients
- 1 cauliflower head
- salt
- ice water
- lemon juice
- turnips, thinly sliced
- zucchini, thinly sliced
- beets, thinly sliced
- celery, strips
- carrots, strips
Instructions

Remove outside leaves from cauliflower.

Soak head-down in salted water.

Rinse well.

Break or cut into desired size flowerettes for dipping.

If you want cauliflower to stay white for several days, allow flowerettes to soak a little while in ice water with lemon juice added.

Store drained in plastic bag or in hydrator in refrigerator.
Tips & Notes
- • If flowerettes are allowed to soak a little while in ice water with lemon juice added, the cauliflower will stay white for several days
- • Along with cauliflower for dipping try thinly sliced turnips, zucchini, beets, celery and carrot strips
- • Be sure fresh vegetables used for dipping are at their peak of freshness
