Cheese Balls
A classic fried cheese appetizer recipe from Kathleen Marshall of Tyler, Texas.

Ingredients
- 1 lb cheese
- 3 tbsp flour
- 1 tsp salt
- 1/8 to 1/2 tsp red pepper
- 3 to 4 egg whites
- cracker crumbs, very fine
Instructions

Grate cheese on fine grater. Do not allow to pack down.

Add flour. Use more if needed to dry out cheese.

Add salt and pepper.

Beat egg whites very stiff.

Blend with cheese.

Roll in small balls the size of small walnuts and dust in cracker crumbs.

Fry in deep fat over high heat (375-400°) until brown.
