Cheese Souffle
Serves: 12

Ingredients
- 3 tbsp. butter
- 1/4 c. flour
- 1-7/8 c. milk
- 1 tsp. salt
- Dash of Cayenne pepper
- 1 tsp. prepared mustard
- 2 drops Worcestershire sauce
- 1 c. grated American cheese, packed
- 6 eggs

Make a cream sauce by melting the butter and blending in the flour, cook until bubbly and add the milk, salt, cayenne, mustard and Worcestershire sauce and bring to a boil one minute.

Time to cool slightly, add the cheese, beat the egg yolks until thick and add the cheese mixture, stirring constantly.

Beat the egg whites until stiff, fold into the cheese mixture carefully.

Pour into a well buttered baking dish (3/4 full). Bake at 300° in a hot water bath for one hour, or until a silver knife inserted into the center comes out clean.
