Chicken Breasts and Rice Indienne

Ingredients
- 3 tbsp margarine
- 3 lbs chicken breasts
- 1 onion, chopped
- 1 green pepper, chopped
- 2 tbsp lemon juice
- 2 c chicken stock
- 1 1/3 c mincemeat
- 1 1/2 tsp salt
- pepper
- 1 c raw long grain rice
- 1 to 3 tsp curry powder

Melt margarine in a large skillet and brown chicken breasts. Remove chicken and saute onion and pepper in same skillet.

Add lemon juice, stock, mincemeat, salt, pepper, rice and curry. Mix well and turn into 2-1/2 qt. casserole.

Arrange chicken breasts on top of rice mixture, cover and bake at 350 F. about 1 hr. or until tender.
