Lental Vegetable Soup
A hearty winter vegetable soup with lentils, perfect for cold weather. Garnished with parsley and garlic right before serving.

Ingredients
- 2 TBS veg oil
- 1 onion
- 2 TSP curry powder
- 1/2 TSP cumin
- 1 TBL catsup
- 6 cups veg stock
- 3/4 cup lentils
- 4 oz broccoli
- 2 carrots
- parsley
Instructions

Cook onion in oil until soft and beginning to turn golden. Add curry and cumin

Stir in tomato paste and vegetable stock.

Cook lentils for 30 minutes.

Add broccoli and carrots and cook another 30 minutes.

Stir in parsley just before serving.
Tips & Notes
- • Parsley garnish to be added just before serving
- • Can use red or brown lentils
- • Cook vegetables until tender
