Seafood Melba

Ingredients
- 1 stick butter
- 8 tbsp flour
- 2 c milk
- 2 c cream
- 1 c Cheddar cheese, grated
- 1 tsp salt
- 1 tsp paprika
- 1/4 oz buttered mushrooms
- 2 6 oz cans crabmeat
- 1 6 oz can lobster
- 1-1/2 lb cooked shrimp
- 1 tbsp lemon juice
- 2 jiggers sherry
- 2 tbsp catsup
- 1-1/2 tsp Accent
- Dash of cayenne
Instructions

Blend flour in melted butter, add milk and cream and cook, stirring constantly until it thickens.

Stir in cheese, salt and mushrooms.

Add seafood and heat over medium heat then add the remaining seasonings.

Simmer gently.

Serve over melba toast or in toast baskets or patty shells.
