New Orleans Eggplant

Ingredients
- 1 lge. eggplant
- 1 lge. onion
- 1 lge. bell pepper
- 1/2 stick margarine
- 1 c. sharp Cheddar cheese
- 1 tbsp. flour
- 1 can oysters & juice
- 1 c. shrimp, cooked
- 1/4 tsp. celery seed
- 1 tsp. fresh ground pepper
- 1 tsp. Accent
Instructions

Peel and slice eggplant and boil until tender. Drain well and add salt and pepper.

Saute onion and bell pepper in margarine until tender. Chop oysters.

In large bowl mix all ingredients. If mixture is dry add a little cream.

Pour in greased casserole and top with buttered bread crumbs.
