Oriental Chicken
Serves: 12

Ingredients
- 1/2 c butter
- 1/2 c flour
- 1 tbsp salt
- 1 c cream
- 2 c milk
- 3 c chicken stock
- 1 tsp Accent
- 4 c diced chicken
- 1/2 c sauteed mushrooms
- 1/2 c blanched almonds
- 1 c sliced water chestnuts
- 1/4 c pimiento, cut in strips
- 1/4 c sherry

Melt butter in top of double boiler, add flour and salt and cook until bubbly.

Add cream, milk and chicken stock, stirring until smooth. Cook over hot water for 30 mins.

Just before serving add and blend thoroughly: diced chicken, sauteed mushrooms, blanched almonds, sliced water chestnuts, pimiento strips, and sherry.

Serve over cheese souffle or in a patty shell, or over rice.
