Pickled Shrimp
A marinated shrimp dish that keeps for at least a week in the refrigerator. Delicious when mixed with salad or served on its own.

Ingredients
- 3 lbs fresh shrimp, cleaned
- 1/4 c pickling spices
- celery tops
- bay leaves
- 3/4 c white vinegar
- 2 c onion, thinly sliced
- 2 tsp salt
- 2-1/2 tsp celery salt or seed
- 2-1/2 tbsp capers with juice
- tabasco
- 1-1/2 c salad oil
Instructions

Boil cleaned shrimp with pickling spice, celery tops, and salt. Cool.

Alternate layers of cooked shrimp, sliced onion and bay leaves in a covered dish.

Mix sauce well and pour over shrimp, onions and bay leaves.

Cover and store in refrigerator for at least 24 hrs. before serving.
